1.鸡胸肉洗净。

2.去掉筋膜。

3.绞成鸡蓉。

4.加入一个鸡蛋的蛋清。

5.如图3满勺淀粉,继续搅拌。

6.此时鸡肉已经很细腻了,加入胡椒粉、盐、3大匙葱姜水继续搅拌。

7.搅拌好的鸡肉泥光滑细腻,取出肉泥,我又摔打了大约100下,让肉泥更加有弹性。

8.锅里多加些水,大火烧至边缘冒小泡,调小火,左手抓一把肉泥,从虎口处挤出,右手用小勺取下肉丸,放入水里。

9.依次做好所有鸡肉丸。

10.煮到全部浮起,捞出。

20.中小火烧,中间可以翻拌。

21.烧至汤汁浓稠红亮即可。

22.成品,肉丸本身颜色较浅,最后浇上汤汁特别漂亮,红亮有光泽,口感酸酸甜甜有弹性。
